Recipe: Stovies and Homemade Oatcakes

For Hogmanay last year, we decided to make stovies since we had leftover roast beef from our Christmas party a couple of days back. (Hogmanay is the Scottish word for New Year's Eve).

Stovies is a traditional Scottish potato and meat stew and is one of Hubby's favorite comfort food from back home. Stovies should ideally be prepared the evening before or on the morning of the day you plan to serve it. This is to allow the flavours to develop - the longer you leave it the better it will taste!

Stovies should be served with oatcakes and pickled beetroot. We (aka Team Daniel and mummy) made the oatcakes from scratch, and I have to say these are the cutest oatcakes I've laid my eyes on. :P Yup, the boss man decided he wanted to use cute animal cookie cutters and also put smiley faces on the round ones. Well done my boy!






I've posted a stovies recipe before a long time ago, however please find an improved version below as long as a recipe video which I made. Enjoy!

Stovies (Scottish Potato and Beef Stew)
Recipe by Baby Sumo
Preparation time: 5-10 minutes
Cooking time: 1- 1 1/4 hours
Serves 5-6


Ingredients
Leftover roast beef, cut into thick chunks (about 300-400g)
6 large potatoes, washed, peeled and thinly sliced (about 1 kg)
1 onion, thinly sliced
1 tbsp butter
1 tbsp oil
400ml beef stock
Freshly ground salt and pepper, to taste


1. In a large pot, melt the butter and add the oil over medium heat. Then, add the onions and saute for about 3-4 minutes, until softened.

2. Add the roast beef and saute for about 2 minutes. Add the potato slices and then pour the stock in. Leave to simmer on low heat about 45 minutes, checking frequently and giving it a stir now and then so that it cooks evenly. Add more water or stock as required. Season with salt and pepper.



3. After 45 minutes, take it off the heat and leave for a few hours for flavours to develop.

4. Before serving, heat up the stovies over medium low heat and simmer for a further 10-15 minutes. Serve hot with oatcakes, ketchup and garnish with some chives.

*Note: Stovies should be served with beetroot too, however we had to omit it this time as we forgot to get them from the supermarket.

  1. I love the bear! Sighhhhh!!! No oats in our gluten-free diet either. :( The stew's fine, all ingredients permissible, thank God! At least there ARE things we can still eat and enjoy.
